Sol is a gorgeous rooftop bar and restaurant that boasts views from the hills all the way to the coast. The terrace is simple yet decadent, with tall tables ideal for sunny cocktail sipping, as well as a cosy firepit to keep you warm during the colder nights. Inside, the dining room is a classy affair, featuring subtle tones, bubble-like lighting hanging from the ceiling, plus stunning floor-to-ceiling windows.

Head chef Kane Pollard has built a menu centred around sustainability, offering beautiful two-course a la carte meals, as well as seven-course tasting experiences. Indulge in dishes such as beetroot gnocchi accompanied by mushroom custard, woody herb and beet leaf, plus pumpkin XO noodles served alongside fresh radishes and grilled cauliflower leaves.

What’s a showstopping dinner without a glass of vino to go with it? While you tuck in, enjoy a tipple from an extensive list of international and local wines. If you fancy a cocktail, then check out their signatures, which includes Marshmallow Toast. This naughty concoction mixes Buffalo Trace bourbon, Carter’s Coffee liqueur, Frangelico, Wattle Toffee liqueur, and is topped by foam and a toasted marshmallow.
