Having already conquered Brighton and Camden with its delicious vegan goodies, pizza restaurant Purezza is taking its influence one step further and opening up the UK's first vegan cheese factory. The eatery wowed judges at Pitch + Plant, a pitching event for companies marketing plant-based goods and services, at the annual Vevolution vegan festival and secured itself a wad of funding to kick start the venture.
The factory, which they are still in the process of fundraising for, will be churning out their signature Mozarella 2.0, a lab-crafted 'cheese' using only natural ingredients but avoiding common allergens such as soya, nuts and gluten making it suitable for most diets. Purezza, which set up its original St James's Street restaurant back in 2015, will be looking to supply this new super vegan cheese to restaurants who are looking to beef up their vegan offerings, as well as for use of their own delicious range of Neapolitan pizzas.
