Fancy saving the planet, one swig at a time? Then try out Edinburgh Science Festival's Toast to Gaia, an eco-friendly cocktail trail where you can find sustainable sips at 17 of the city's best independent bars.
The festival (which runs from the 9th to the 24th of April) chose the climate crisis as its theme for 2022, and is shining a light on the fantastic work the hospitality industry is doing to tackle it. With that, they tasked the capital's most popular watering holes to concoct new planet-friendly drinks. The result? A bevvy of marvellous mixes - just check out Bramble’s Lovelock, which sees Scottish SeaWolf rum mingling with garden peas, fermented cucumber (leftover from gin cocktails) and honey.
Other haunts taking part include: The Voodoo Rooms, Joseph Pearce, Little Rascals Wine, Paradise Palms, The Green Room, Nauticus, Panda & Sons, Victoria, Vesta, Leith Depot, Hoot the Redeemer, Last Word Saloon, Smoke & Mirrors, Lucky Liquor, Bellfield Taproom and Uno Mas.
You can find Toast to Gaia across the 17 Edinburgh bars until the 24th of April. Discover more of the best cocktails in the city here. Want to be the first to know about new openings? Sign up to our future Edinburgh newsletter.
