Scott Smith made waves as chef patron of Norn, and while it was sad news all round when that restaurant eventually closed with his departure, it does mean we get his exciting new venture: Fhior. Meaning ‘true’ in Gaelic, the venue is all about seasonal and fresh food. It’s split between the main dining room, offering up tasting menus in the evening and a la carte lunches on Friday and Saturday; and the front-of-house café-cum-bar, which is a 12-cover space offering coffee and pastries, and pre or post dinner drinks.

What we say:

The core idea behind Fhior is seasonal, fresh ingredients. For that purpose, they’ve created their own Fhior Kitchen Garden outside of Edinburgh and employed a team of local suppliers and foragers to ensure that ingredients are high quality. Anything that’s not used is preserved using fermentation, tinctures and drying. Wines are global and reflect the intricacies of the region with minimal outside interference.
