After the success of their Michelin-starred eatery Heron, rising stars in the culinary world, Tomás Gormley and Sam Yorke, have opened an exciting new venture: Skua. This intimate yet buzzing bar and restaurant in Edinburgh is pretty darn slick, boasting moody interiors, from the black marble tabletops to the flickering candlelight.
Gormley and Yorke will both be heading up the kitchen of the Stockbridge spot, alongside chef de partie Aran Lowry, championing local, nose-to-tail-butchery. The result? A regularly changing menu of small plates, like pork belly sandos with kimchi and sweet chilli, as well as koji chicken accompanied by a cured egg yolk. There’s plenty to drink too, including an extensive selection of international wines, not to mention signature cocktails. Our favourite might just be the Any Other Name, made up of Cognac, Antica Formula, Gewürztraminer, violette, rhubarb and chocolate.
