While it might sound like a northerner's dream, Caribou is the first restaurant to bring authentic poutine to Liverpool. This Canadian fast food is made from hand cut chips, topped with cheese curds and gravy, and they’ve been delivering it across the country as a pop up for years before setting up shop in Slater Street. While the interiors are more contemporary and minimalist – with exposed brickwork, simple furnishings and a bold red colour scheme – the food is all about big portions of hangover-busting comfort food.
What we say:
It turns out that even on the continent of North America, the northerners love chips and gravy. The two owners of Caribou fell in love with poutine while skiing in Quebec, and thankfully decided to bring it over here, though their meat and dairy comes exclusively from British farmers. The homemade gravy, however, originates from a traditional Quebec recipe with their own punchy twist. The toppings cater for meat eaters, vegetarians, vegans and gluten-freers alike, with recipes ranging from the Mrs Piggy Poutine made from house pulled pork, smoked streaky bacon and sausage, to the Tex Mex Poutine, made from homemade guacamole and salsa, sour cream (without for vegans) and jalapenos.
