Scout arrived in Shoreditch this April and follows a concept usually employed by restaurants - only using seasonal and British produce. The brainchild of Matt Whiley (who has worked with Worship Street Whistling Shop and Peg + Patriot), the new cocktail spot serves a rotational menu of 10 cocktails, five house ferments and five beers. Expect drinks such as strawberry wine, lemon balm and whey, and carrot, hempseed and liquorice, along with bar snacks created from left over ingredients - fried vegetable skins with house seasoning for example - in order to reduce waste.

Shoreditch is a hot spot of amazing cocktail bars and Scout, on Great Eastern Street, looks like a pretty good contender. The venue is split in two, with the downstairs public area serving seasonal and British tipples. Perhaps most excitingly, there is also a laboratory which seats ten and has a cocktail menu that changes daily. The room is available for private hire, cocktail classes and other events that teach you more about Matt Whiley's incredible concoctions.
