The man behind cocktail consultancy Talented Mr Fox has opened his own spot minutes from Old Street tube station on Great Eastern Street in Shoreditch. Named Scout, the venue brings an innovative approach usually reserved for restaurants to their menu - all the ingredients are seasonal and British.
Founder Matt Whiley has previously worked with the likes of Peg + Patriot, Worship Street Whistling Shop and Purl, and brings the same brand of inventiveness to Scout. The menu changes according to what is in season and bar snacks are created from left-over ingredients to minimise waste. The venue serves 10 cocktails, five ferments and five beers at any one time as well as a bar snack menu with dishes such as fried vegetable skins with house seasoning and pickled celeriac with truffle.
Split in two, the downstairs bar is the main drinking area while a ten-person Lab - a private area featuring a daily changing menu of food and drink that the team are developing in real time for future menus. This provides a front row seat delivering insight into the creative process behind Scout.
