Former head bartender of Nightjar, Marian Beke has teamed up with Rusty Červen, the former senior mixologist at The Connaught Baropen. Together, the Slovakian duo have opened up a cocktail bar in ode to the classic Gibson cocktail. The pair use the freshest lemons and olives alongside the finest pickled onions to create the perfect version of this Martini variant. The bar draws inspiration from the Edwardian era in which the Gibson was invented, and it's found on a corner plot between Old Street and Clerkenwell.

Two of London's best bartenders have teamed up to create the perfect Gibson cocktail. Marian Beke - formerly the head bartender at Nightjar - has partnered up with fellow Slovakian, Rusty Červen. And would you believe it, Červen is pretty clued up on the whole cocktail thing too; he was previously the senior mixologist at The Connaught Bar in Mayfair. The pair have found that more and more people in the capital are asking for the Gibson cocktail, but no bar has yet mastered the Edwardian concoction. The duo believe that London bars are overlooking one fundamental ingredient - the pickled onion. These two plan to give the people what they want by investing in some premium pickles and serving luscious drinks in intimate surroundings at their aptly named bar; The Gibson.
