Gin is a wonderful spirit and perfect for fresh cocktails with bite - ideal for summer drinking in London. One of my favourite Gins is Hayman's Old Tom Gin. Harry Johnsons famous Bartender Manual of 1882 listed Old Tom Gin as an essential liquor required in the bar room. Now that is history and heritage!

The Martinez is the precursor to the original Martini, created by famous bartender Jerry Thomas in 1862, San Francisco.
1 part of Haymans Old Tom Gin
1 dash Bitters
2 dashes Maraschino Liqueur (cherry liqueur)
2 parts sweet Vermouth
Shake well and strain into a martini glass and garnish with a slice of lemon. Try this at home or challenge one of the best London cocktail bars to make one for you!
