No, this isn't London's first pop-up, but it is London's first pop-up sparkling wine bar. Hosting a ten week residency at the ever cool and ever neon Lights of Soho in Brewer Street, Fiz comes at you courtesy of Barnaby Lewis, Max Bigland and Jordan Nadian. Inspired by all the food and drink that the backstreets of Barcelona had to boast, Fiz has been created to change the way you look at, think about and drink bubbles.
Working with wine merchant The Knotted Vine, Fiz have curated a simple menu of only 8-10 bottles, owing to their bid to make bubble consumption less stuffy, and less formal. While there will be Spanish cava and Italian prosecco, don't be shy in trying drinks from Brazil and specially brought over bubbles from Portugal. Rumour has it, there's sparkling red wines too.
Not avoiding food by any means, Head Chef Max Bigland is churning out a whole heap of plates to compliment those bottles. Promising the best in British bites, there's cheese from Muswell Hill, bread from the Celtic Bakers and plenty of other localised ingredients featured heavily on the menu. Wondering where the brunch is? They'll have one of those too. Join them on weekends for the likes of free-range poached eggs and indulgent buttermilk pancakes, alongside a bottomless fizz option.
