St. JOHN

St. JOHN is one of the spearheads of nose-to-tail cooking, appropriately so as it's located in a former bacon smokehouse close to London's Smithfields meat market. It's been around since 1994 dishing up scrumptious plates and is known to have been a favourite of the late Anthony Bourdain. The restaurant also has a winery (born from co-founder Trevor's frequent wine purchasing from France), a bakery, and two other eateries in Marylebone and on Commercial Street near Spitalfields market.

Seasonality is at the core of the sleek, bistro-style dining space, and head chef Fergus Henderson's menu includes off-cuts of meat used innovately and based on traditional, English recipes. Look forward to the likes of crispy pig's cheek with bobby beans and roast shallot (£15), roast bone marrow (£16) and an indulgent plate of bread and butter pudding drizzled in butterscotch sauce (£9.80).
