The pizza industry is one that, without the right insight, is easily dominated by chains and un-inspiring flavours, but there's one restaurant headed to Islington that looks to be bringing it all back down to humble authenticity with specially shipped wood ovens, lashings of prosecco and even a pizza that harks of a vegetable, charcoal base.
