Adam Wood (Perilla) and Gethin Davies (Portland), celebrate the flavours and fantastic ingredients of their native Wales in this special three-night pop-up supper for St. David's Day.
Inspired by childhood fishing trips on the River Teifi and informed by Adam and Gethin's experiences in the kitchens and on the floor at top London restaurants, Coracle celebrates the bounty of South Wales through a modern five-course menu. Highlights include the laverbread and lardo snack, Welsh mutton and nettle broth and short rib, grilled onions and marrow. A vegetarian menu is also available, featuring the finest foraged and cultivated Welsh greens, grains and roots, with dishes including monk’s beard, potato and wild garlic, as well as shiitake broth, nettles and barley.
Adam’s cooking style is formed by his time at The Gilbert Scott and two Michelin starred The Square, where he trained under renowned London chefs, Marcus Wareing and Philip Howard, the latter of whom is now one of the backer’s of Perilla in Newington Green, where he is currently working as senior-sous chef.
From this proximity to nature in his childhood and memories of simple, honest flavours, Adam notes how, “Seasonality is obviously a massive inspiration to me but a lot of it comes down to what I love to eat. I find myself wanting to cook the food that makes me most happy, I feel guests enjoy and understand the food far more because it doesn’t feel uptight”.
The same can be said of the wines that will be paired together with Coracle’s menu by Muriel Chatel, founder of Borough Wines, as well as Coracle’s FOH Gethin Davies, who was also born in Wales and who loves to reference his home country in his wine pairings. Gethin constructs pairings on a daily basis to match the tasting menu of Michelin starred Portland,.

The menu is written in an understated format that lets quality ingredients speak for themselves, when paired with the wonderful Welsh wines, this supper club is a fun and interesting way to celebrate St. David’s Day this March.
