Join us for a Guest Demonstration featuring Piotr Lesnianski, chef, baking instructor and self-taught sourdough baker.
Also known as Bread Pete, Chef Piotr has 20 years’ experience working in professional kitchens, training in different restaurants and under renowned chefs including Tom Aikens.
Chef Piotr focusses on milling fresh flours using heritage grains and other rare varieties of cereals. For this demonstration, he will focus on using rare varieties of grains and pseudo cereals, milling them into different flours and using in sourdough loaves.
Guests will learn about the extraction rates and different ways of introducing whole grains into dough without compromising it’s structure and Chef Piotr will prepare two different kinds of porridge and demonstrate how to add flavour and texture through this technique.
