While it only opened little more than a year ago, Mana has already made its mark on Manchester's dining scene by being awarded the city's first Michelin star in more than 40 years. Having interned at world-famous Noma and citing the likes of Gordon Ramsay as his influence, chef Simon Martin was always going to do great things, and his multi-course menu did not escape the judge's attention in this year's handout. Referencing Martin's time in Copenhagen's Noma, the Michelin Guide stated that his dishes were 'modern' and 'packed with originality and complex in their delivery'.
The Ancoats restaurant has garnered national attention since it opened in October 2018, with an emphasis on using seasonal and natural British products in innovative ways. Mirroring the seasons to bring guests 'fine dining artistry', the menu is a 12-16 course journey that changes daily; past dishes have included the likes of salt-aged duck hung over burning charcoal and monk fish liver tart and blackcurrant wood.
