Secret bars make for an intriguing twist on the usual night out drinking. Harking back to an era never really experienced here in the UK, they're inspired by the American Prohibition of the 1920’s. Cue Science & Industry; the secret bar allowing us a peek into the past.
Located above Cane and Grain in Manchester’s Northern Quarter, Science & Industry a clandestine spot. Its entrance, hidden in plain sight behind C&G's rough-hewn wall panelling, opens up onto the hallway. A good look through the gloom should illuminate the stairs, leading the way towards a low-lit bar area. With large brown leather booths, bar stools scattered throughout and plenty of pendant lighting, this is the perfect place for conspiracies to sprout. And what better way to get those conversations started than with a cocktail or two?
Cocktails are grouped into light, fruity flavours and progress into much more potent potions. We took our cue from this and started simply. My gateway cocktail of choice was the gin-fuelled Mom’s The Word (£9.50) whilst my partner in crime went for You Feta Believe It (£9.50). Served in a chunky crystal glass, the sour-style tippled combined feta and tomato pisco with red grape shrub, lemon, syrup and egg white for a savoury finish.
Next up, it was time to graduate to more experimental cocktails. After all, when alcohol is prohibited... you’re going to have to get creative. This time we chose the Port Of Kiwi (£9.50) and Insect Hinges (£9.50). Our favourite by far, the Insect Hinges - invented by S&I’s resident mixologist - has now firmly rooted itself into Mancunian mythology. Blending bee-pollen-infused Bols Genever with Campari Cask Tales, pistachio syrup, citrus and egg white, this was a nutty take on the classic Bees Knees.
