Description
Set to open in Cutting Room Square in Ancoats, Goose Fat & Wild Garlic is the latest venture from Adam Regan and Sophie Jarvis, the duo behind Mexica and Stage and Radio. Their latest opening will focus on organic and seasonal produce as well as having an onsite brewery.
Fundamentum brewery will be housed in the glass-fronted restaurant, meaning visitors can see the entire brewing process. The brewery will focus on a five barrel system which aims to be as sustainable as possible with the excess yeast being turned into a Marmite-style spread, vinegar and sourdough bread which will then be served in the restaurant.
